Beignets…. New Orleans Style!!

I did it! And they were spectacular!
Are you ready to make beignets? Here we go!

In a large bowl, sprinkle 1 envelope active dry yeast over 1 1/2 c warm water. Stir to dissolve and let stand for 5-10 minutes.

Add 1/2 c sugar, 1 tsp sea salt, 2 eggs (beaten), and 1 cup evaporated milk. Mix that all up really well.

Add 4 c flour and beat until smooth. Add 1/2 c shortening (soft) and blend in another 2 1/2 c flour.

Cover and chill it for 4 hours. You can also do this at night and put it in the fridge for the morning!

Now, the icky part… Heat oil. You can use a deep frying pan or electric skillet. You’ll need about 1″ to 2″ of oil.

Roll the dough out on a well floured board to about 1/4″ to 1/2″ in a square (i did it at 1/4″ approx) Cut into 3″ squares. Gently drop into the hot oil.

Fry a few at a time turning after about a minute (golden on one side) until they are golden and puffy on both sides.

Drain on a paper towel. Then…. Serve on a plate…. Hot…. Sprinkled generously with icing sugar. This will make about 24 beignets!

Hope you had coffee ready!!!   These are yummy yummy good…. Don’t have too many!  And yes, it looks like a lot of icing sugar but it doesn’t stick… so enjoy it and sprinkle it on generously! You won’t be eating it all!  Trust me!
