Mardi Gras – aka Fat Tuesday

What would Mardi Gras be without pancakes? Mardi -less?  We didn’t do the pancake thing in my house tonight, but we did make fresh waffles.  This was a team effort.  I made the batter. My husband cooked the waffles.  Served up with some maple syrup, freshly whipped cream and fresh strawberries.  It was a yummy, quick, “fat tuesday” supper.

Here’s what you will need:

a waffle iron! Duh!  We picked ours up brand new on sale for just $5.  Yep!  True said!
So, get that good and hot!

Batter:

1 3/4 cup flour
1/2 Tbsp Baking Powder
1/2 tsp salt

Mix together.

In a separate bowl, whisk together 3 eggs,  1 1/2 cups of milk, and 1/2 cup melted butter.

Make a well in the dry ingredients and pour the egg mixture in all at once.  Whisk together (or use your stand mixer to blend thoroughly).

Pour into your waffle maker, and wait while they cook up! You’ll need to do this in batches.  But oh my goodness, so yummy andworth the wait!

Serve with whatever toppings you want.  We had maple syrup, whipped cream and fresh berries.

I’m very full, buy also very satisfied!

This is a very simple recipe, but you won’t be disappointed.
